With
my house on the market it seems I am having a hard time updating
Carrie's Kitchen. Well after my purchase of a Gluten Free rotisserie
chicken at Costco I knew I was headed to the kitchen to throw together
my favorite tortilla soup! Perfect on a dreary rainy Wisconsin day!
2 tablespoons of olive oil
1/2 chopped onion
2 cloves of garlic minced
1 can of Mexican tomatoes
1 4 oz can of green chiles
1/2 lime squeezed
rotisserie chicken
1 tablespoon chilli powder
1 teaspoon of cumin
1 box of chicken broth 32oz
Shredded Cheese, cilantro, and gluten free corn tortilla chips for topping
Use a large cooking pot, add olive oil, then add onions and saute for a couple of minutes, add garlic saute for a minute more, add chiles, tomatoes, chicken, lime juice, spices, and chicken broth. Simmer on low heat for 30 minutes. Pour into your favorite bowl, add the cheese, tortilla chips and cilantro. For those of you that like it a bit more spicy I always add a touch of my favorite hot sauce. Enjoy!
